GLUTEN FREE CHICKEN WITH MUSTARD TARRAGON CREAM SAUCE

Yield 4-6 servings

Tender chicken in a delicious Dijon cream sauce!  We had this one night while the kids were staying with my parents.  I served it with sautéed spinach on the side and it was so good!

Ingredients

  • 3 tablespoons Olive Oil
  • 2 skinless boneless chicken breasts, 4 boneless skinless chicken thighs.
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons chopped shallots
  • ¾ cup dry white wine
  • 2 Tbsp of Robin Hood Gluten Free Flour
  • 2/3 cup gluten free chicken broth (I prefer Safeway or Kitchen Basics)
  • ½ cup of Evaporated Milk.  I use this in place of Whipping cream
  • 3 Tbsp Dijon Mustard
  • 2 Tbsp Chopped Fresh Tarragon – This dish is so much better when the tarragon is fresh.

Instructions

Tenderize the chicken breast with a mallet.  Cut the breast in half to yield four breast pieces.  Season all the chicken pieces all over with the salt and pepper.  Heat 1 Tbsp of  Olive Oil in a large non-stick frying pan over medium high heat. Add chicken  and sear both sides until golden brown, about 6 minutes per side; set the chicken aside and pour off the fat from the pan, do not wipe the pan clean. 


Keep the frying pan at medium high heat and warm 1 Tbsp of olive oil in the already hot pan. Add the shallots and sauté for a couple of minutes and then add the wine. Reduce to a simmer and cook until the liquid reduces to about half. 


In a separate bowl whisk together broth, evaporated milk, mustard and flour.  Then add to the wine reduction.  Combine together until the sauce thickens (should take 4-5 minutes).  Then add the tarragon and season with salt and pepper to taste.


Add the chicken back into the pan and toss it well with the sauce.  Continue to cook until the chicken is cooked through. 

Serve immediately.


This dish would taste best with rice or with a nice salad or sautéed spinach on the side.  We have only had it once, but I’ve cooked it a second time for this week it was super delicious!

Saving for a down payment is one of the biggest challenges first-time buyers face. What many don’t realize is that the Canadian government offers a program designed to make it easier—the Home Buyers’ Plan (HBP) . This program allows you to withdraw money from your RRSP to help purchase your first home, without immediate tax consequences. Here’s how it works: Who Qualifies? To be eligible, you generally need to be a first-time home buyer. In practical terms, this means you must not have owned a home in the past four years, nor lived in a property owned by your spouse or partner during that time. There are also special allowances if you’re living with a disability or helping a relative with a disability. In these cases, you can use the HBP even if you’ve owned a home more recently. How Much Can You Withdraw? Under the program, you can access up to $35,000 from your RRSP as an individual. Couples can combine their withdrawals for a total of $70,000 . These funds must have been in your RRSP for at least 90 days before you take them out. Paying It Back The HBP isn’t “free money”—it’s an interest-free loan from your own retirement savings. You’ll have 15 years to repay the full amount back into your RRSP, starting in the second year after withdrawal. Each year, the CRA will send you an HBP Statement of Account outlining how much needs to be repaid. If you don’t make your repayment in a given year, that amount will be added to your taxable income. It helps you put together a larger down payment, which can reduce your mortgage amount and monthly payments.
